Jim Dad's (Grandpa Jim) Sure-to-Please Brownies

Modified from several different recipes including boxes of cacao squares and Great Grandma's original Boston Cooking School Cook Book.

Grease 8-9 inch baking dish with butter or substitute. Melt chocolate squares in large bowl in microwave or in pan on stove top. Mix in sugar, then mix in oil and vanilla, whip in eggs until fluffy, flour, and nuts. Spread into baking dish. Bake at 350 F for approx. 30 min or until toothpick comes out clean.

*For a no-heat procedure prior to baking, use powdered baking cocoa. Most people say 3 Tbsp cocoa plus 1 Tbsp oil can replace each 1-oz square of unsweetened baking chocolate. For a less intense brownie, use 2 Tbsp cocoa instead of 3 Tbsp/ 1-oz baking chocolate. For this recipe this means, start with a rounded 1/4 cup (4 rounded Tbsp) baking cocoa in a bowl. Mix with 2 Tbsp canola. Then mix in sugar etc as per instructions in the preceding paragraph.
